Homemaking Tip #3

Yes, indeed, here is another recipe. This is one that I’ve “amended” a bit, and use alot!

Stir-Fry 

1 lb boneless meat (chicken, beef, pork, deer…)
2 cloves garlic
2 small onions, cut into 8th’s
1 can (8 oz) water chestnuts (I leave this out, but if you like them, use them)
1 cup baby carrots, cut into 4th’s.
1 Tbs soy sauce
2 teaspoons cornstarch
1/2 tsp ground cayenne pepper, plus a little
2 Tbs vegetable oil
3 cups broccoli flowerets or 1 (16 oz) bag frozen (I use frozen)
1/2 cup peanuts

To make marinade: mix 1 minced garlic clove, soy sauce, cornstarch, and cayenne pepper. Trim fat off meat and cut into strips. Add to marinade, cover and refrigerate at least 20 minutes (I usually do longer).

Heat a large skillet over high heat. Add the vegetable oil, then marinated meat. Stir-fry until meat is no longer pink in center (about 5-6 minutes). Add onions, broccoli, water chestnuts, carrots, and other clove of garlic, minced. Also add a shake of cayenne pepper. Stir-fry 2 minutes.

Stir in the peanuts and heat through.
Serve over rice.

    I’m not sure if “wifely” is a word. Still, the recipe sounds good, but I’d probably leave out the peanuts and just have a side dish of boiled ones instead. Yum!
